Dark brown sugar is cane sugar carrying a heavier share of cane molasses than the light or golden variety. That extra molasses is what you taste: a deeper, slightly smoky caramel note with a hint of toffee, and it is why the same cookie recipe comes out darker, chewier and more fragrant when you reach for the dark bag instead of the light one.
Where it earns its place. Gingerbread, molasses cookies, blondies, banana bread, pecan pie, sticky toffee pudding and streusel toppings all lean on it. So does the savory side of the kitchen: barbecue rubs and sauces, ham and salmon glazes, teriyaki and jerk marinades, baked beans, and braises that want a little sweetness to balance vinegar or heat. A spoonful also dissolves nicely into oatmeal, coffee and brown sugar boba tea.
